Caramel Latte Protein Balls

Ingredients
1 Cup Large flake oats
1.5 Cups Puffed quinoa
½ Cup shredded, unsweetened coconut
4 Scoops (1 Cup) Vanilla Protein powder (We love Isagenix IsaPro)
½ Cup Unsweetened vanilla almond milk
¼ Cup Coconut oil, melted
2 Medjool dates, pitted
2 tsp Ground coffee
1 tsp Caramel extract
2 Tbsp White chocolate chips plus 2 tsp coconut oil, melted
22 Coffee beans (for decorating)
Directions
1. In a large bowl, mix together Oats, puffed quinoa, coconut, and protein powder
2. Place almond milk, dates, ground coffee and caramel extract in a blender and blend until smooth
3. Mix melted coconut oil and blended mixture into the dry ingredients
4. Form into balls and place on parchment lined cookie sheet. Place in freezer to firm up
5. Melt white chocolate chips and the 2 tsp of coconut oil together
6. Dip each ball in the white chocolate and decorate with a whole coffee bean
Store in fridge or freezer in air tight container
