Chocolate Chip Cookie Dough Balls

Ingredients

 

1 Can (540ml) Chickpeas, well drained

¼ Cup Almond butter

1 Tbsp Maple syrup

2 tsp Vanilla extract

5 Scoops Vanilla protein powder (we love Isagenix IsaPro)

6 Tbsp Coconut flour

¼ Cup Shredded unsweetened coconut

½ tsp ground cinnamon

2 Tbsp Mini dark chocolate chips

 

 

Directions

 

1. Place chickpeas, almond butter, maple syrup and vanilla into a high speed blender or food processor and blend until smooth.

2. Scrape mixture into a large mixing bowl and stir in protein powder, coconut flour, coconut, and cinnamon

3. Stir in chocolate chips

4. Roll into balls and place on parchment lined baking sheet.  These are sticky, so it helps if your hands are slightly damp.

5. Place in freezer to firm up, then store in an airtight container in fridge or freezer.
