Chocolate Peanut Butter Quinoa “Puffy” Balls
Makes 24 balls

Ingredients:
2 cups puffed quinoa
½ cup natural peanut butter (I used organic, crunchy)
3 scoops vanilla Isapro protein powder
¼ cup unsweetened organic cocoa powder
4 tbsp coconut sugar (or other natural sweetener)
¼ cup + 2 tbsps unsweetened almond milk
Instructions:
Mix all ingredients except for quinoa together in a large bowl. Stir in puffed quinoa until well coated.
Form into balls and place on parchment lined cookie sheet.
Let set in freezer for 10-15 mins. Can be stored in the freezer in an airtight container (and are good eaten RIGHT OUT of the freezer, too!)
