Protein Peanut Butter Truffles

Ingredients

 

1 Cup Natural peanut butter

3 (3/4 Cup) Scoops Chocolate protein powder (We love Isagenix Isapro)

6 Tbsp PB2 (Powdered peanut butter)

2 Tbsp Coconut flour

2 Tbsp Unsweetened cocoa powder

2 Tbsp Dark Chocolate chips

2 tsp coconut oil

2 Tbsp chopped peanuts

 

Directions

 

1. In a large bowl, mix peanut butter, protein powder, PB2, Coconut flour and cocoa.  Use an electric mixer or lots of muscle power as it will be thick

2. Roll into balls, working quickly as they will soften fast.  Alternatively, press into mini paper muffin cups.

3. Place in freezer to firm up

4. Melt the chocolate chips and coconut oil and drizzle on the balls or cups

5. Sprinkle with the chopped peanuts

 

Best if stored in the freezer as these soften very quickly at room temperature.
